Veggie Omelet - Crack a couple of eggs into a greased fry pan. Allow them to harden a little bit. Then add a mix of your favorite chopped vegetables such as bell pepper, mushrooms, onions, and cilantro. Fold half of the egg over the other half and allow to cook a minute or two longer. Remove from pan. You can also add a couple tablespoons of mozzarella if you wish.
